5. What is semolina?
Semolina is the main product produced by milling durum wheat. It comes from grinding the inner part of the grain (endosperm) and is much coarser than flour.
Depending on how much the endosperm is ground, the following categories of semolina are produced:
a) coarse semolina used in confectionery
b) fine semolina that can be used to make sweets and bread products.
c) semolina for pasta-making used to produce pasta.
