14. What is gluten?
The term "gluten" refers to a protein composite found in wheat, rye, and barley, or their crossbred varieties and derivatives, to which certain people are intolerant and which is insoluble in water and in a solution of sodium chloride 0.5 Μ (EU regulation 41/2009 20 January 2009)
